Arbëreshë Eggplant and Tomato Casserole (Patëllxhanë të Mbushur)
Patëllxhanë të Mbushur, or Arbëreshë Eggplant and Tomato Casserole, is a traditional dish from the Arbëreshë cuisine, known for its rich flavors and hearty ingredients.
Ingredients
- 2 large eggplants, sliced
- 4 tomatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the onions and garlic, and cook until softened.
- Add the diced tomatoes to the skillet and cook for 5 minutes, until they start to soften.
- Meanwhile, in a separate skillet, lightly brown the eggplant slices on both sides.
- Layer the eggplant slices in a casserole dish, then spoon the tomato mixture over the eggplant.
- In a small bowl, mix the breadcrumbs and Parmesan cheese. Sprinkle the mixture over the tomato layer.
- Bake in the preheated oven for 30 minutes, or until the top is golden brown.
- Serve hot and enjoy!
