Arbëreshë Eggplant and Tomato Casserole (Patëllxhanë të Mbushur)

Ingredients

  • 2 large eggplants, sliced
  • 4 tomatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the onions and garlic, and cook until softened.
  3. Add the diced tomatoes to the skillet and cook for 5 minutes, until they start to soften.
  4. Meanwhile, in a separate skillet, lightly brown the eggplant slices on both sides.
  5. Layer the eggplant slices in a casserole dish, then spoon the tomato mixture over the eggplant.
  6. In a small bowl, mix the breadcrumbs and Parmesan cheese. Sprinkle the mixture over the tomato layer.
  7. Bake in the preheated oven for 30 minutes, or until the top is golden brown.
  8. Serve hot and enjoy!
