Arbëreshë Lamb and Vegetable Stew (Speca të Mbushur)

Ingredients

  • 1 lb lamb, cubed
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 bell peppers, halved and seeded
  • 1 cup rice
  • 1 cup diced tomatoes
  • 1 cup beef broth
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the lamb and cook until browned on all sides.
  2. Add the onion and garlic to the pot and sauté until softened.
  3. Stir in the rice, diced tomatoes, beef broth, paprika, cumin, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 30 minutes.
  4. While the stew is simmering, preheat the oven to 375°F (190°C). Place the bell pepper halves on a baking sheet and roast for 15 minutes.
  5. Remove the bell peppers from the oven and carefully fill each half with the stew mixture.
  6. Return the stuffed bell peppers to the oven and bake for an additional 30 minutes, or until the peppers are tender.
  7. Serve the Speca të Mbushur hot and enjoy!
