Arbëreshë Lamb and Vegetable Stew (Speca të Mbushur)
Speca të Mbushur is a traditional Arbëreshë lamb and vegetable stew that is bursting with flavor and hearty ingredients. This dish is perfect for a cozy family dinner or a special occasion.
Ingredients
- 1 lb lamb, cubed
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 bell peppers, halved and seeded
- 1 cup rice
- 1 cup diced tomatoes
- 1 cup beef broth
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the lamb and cook until browned on all sides.
- Add the onion and garlic to the pot and sauté until softened.
- Stir in the rice, diced tomatoes, beef broth, paprika, cumin, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 30 minutes.
- While the stew is simmering, preheat the oven to 375°F (190°C). Place the bell pepper halves on a baking sheet and roast for 15 minutes.
- Remove the bell peppers from the oven and carefully fill each half with the stew mixture.
- Return the stuffed bell peppers to the oven and bake for an additional 30 minutes, or until the peppers are tender.
- Serve the Speca të Mbushur hot and enjoy!
