Arbëreshë Lamb with Egg and Lemon Sauce (Speca të Mbushur)

Ingredients

  • 1 lb lamb, ground
  • 1 cup rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup parsley, chopped
  • 1/4 cup mint, chopped
  • 1/2 tsp cinnamon
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 4 eggs
  • 2 lemons, juiced
  • 4 cups chicken broth

Instructions

  1. In a bowl, mix the ground lamb, rice, onion, garlic, parsley, mint, cinnamon, cumin, salt, and pepper until well combined.
  2. Form the lamb mixture into small balls and stuff them into the lamb meat, shaping them into ovals.
  3. In a large pot, bring the chicken broth to a boil and add the stuffed lamb. Reduce heat, cover, and simmer for 45 minutes.
  4. In a separate bowl, beat the eggs and lemon juice together.
  5. Slowly pour the egg and lemon mixture into the pot with the lamb, stirring constantly until the sauce thickens.
  6. Serve the stuffed lamb with the egg and lemon sauce on top.
