Arbëreshë Lamb with Egg and Lemon Sauce (Speca të Mbushur)
Speca të Mbushur is a traditional Arbëreshë dish featuring lamb stuffed with a flavorful mixture of rice, herbs, and spices, then topped with a tangy egg and lemon sauce. This dish is a delicious representation of the unique flavors and culinary traditions of the Arbëreshë people.
Ingredients
- 1 lb lamb, ground
- 1 cup rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup parsley, chopped
- 1/4 cup mint, chopped
- 1/2 tsp cinnamon
- 1/2 tsp cumin
- Salt and pepper to taste
- 4 eggs
- 2 lemons, juiced
- 4 cups chicken broth
Instructions
- In a bowl, mix the ground lamb, rice, onion, garlic, parsley, mint, cinnamon, cumin, salt, and pepper until well combined.
- Form the lamb mixture into small balls and stuff them into the lamb meat, shaping them into ovals.
- In a large pot, bring the chicken broth to a boil and add the stuffed lamb. Reduce heat, cover, and simmer for 45 minutes.
- In a separate bowl, beat the eggs and lemon juice together.
- Slowly pour the egg and lemon mixture into the pot with the lamb, stirring constantly until the sauce thickens.
- Serve the stuffed lamb with the egg and lemon sauce on top.
