Arbëreshë Stuffed Tomatoes (Domate të Mbushura)
Domate të Mbushura, or Arbëreshë Stuffed Tomatoes, is a traditional dish from the Arbëreshë cuisine, which is a unique Italian-Albanian fusion cuisine. This dish features ripe tomatoes stuffed with a flavorful mixture of rice, herbs, and spices, creating a delicious and satisfying meal.
Ingredients
- 4 large ripe tomatoes
- 1 cup cooked rice
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon red pepper flakes
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Cut the tops off the tomatoes and scoop out the seeds and pulp. Sprinkle the insides with salt and place them upside down on a paper towel to drain.
- In a bowl, combine the cooked rice, chopped onion, minced garlic, parsley, mint, Parmesan cheese, red pepper flakes, salt, and pepper. Mix well.
- Preheat the oven to 375°F (190°C).
- Stuff the tomato cavities with the rice mixture and place them in a baking dish. Drizzle with olive oil.
- Bake for 30-35 minutes, until the tomatoes are tender and the filling is golden brown.
- Serve the stuffed tomatoes hot, garnished with additional chopped herbs if desired.
