Arctic Berry Cheesecake (Jäämarjahyytelökakku)

Ingredients

  • 200g digestive biscuits, crushed
  • 100g unsalted butter, melted
  • 400g cream cheese
  • 200g Greek yogurt
  • 100g powdered sugar
  • 1 tsp vanilla extract
  • 200g Arctic berries (lingonberries, cloudberries, or blueberries)
  • 50g granulated sugar
  • 2 tsp gelatin powder
  • 50ml water

Instructions

  1. In a bowl, mix the crushed biscuits and melted butter. Press the mixture into the base of a 9-inch springform pan to form the crust. Chill in the refrigerator while preparing the filling.
  2. In a large bowl, beat the cream cheese, Greek yogurt, powdered sugar, and vanilla extract until smooth and creamy. Spread the mixture over the chilled biscuit base and smooth the top with a spatula. Chill in the refrigerator for 2 hours.
  3. In a saucepan, heat the Arctic berries and granulated sugar over low heat until the berries release their juices and the sugar is dissolved. In a small bowl, sprinkle the gelatin over the water and let it bloom for 5 minutes. Then, gently heat the gelatin mixture until it dissolves. Let it cool slightly.
  4. Pour the slightly cooled gelatin mixture over the berry mixture and stir to combine. Allow the berry mixture to cool to room temperature.
  5. Pour the berry mixture over the chilled cheesecake layer and spread it evenly. Return the cake to the refrigerator and chill for at least 2 hours, or until set.
  6. Once set, carefully remove the cheesecake from the springform pan and transfer it to a serving plate. Slice and serve chilled.
