Arctic Berry Cheesecake (Jäämarjahyytelökakku)
This Jäämarjahyytelökakku, or Arctic Berry Cheesecake, is a traditional dessert from the Sami cuisine. It features a creamy and tangy cheesecake filling topped with a layer of sweet and tart Arctic berries, creating a delightful contrast of flavors.
Ingredients
- 200g digestive biscuits, crushed
- 100g unsalted butter, melted
- 400g cream cheese
- 200g Greek yogurt
- 100g powdered sugar
- 1 tsp vanilla extract
- 200g Arctic berries (lingonberries, cloudberries, or blueberries)
- 50g granulated sugar
- 2 tsp gelatin powder
- 50ml water
Instructions
- In a bowl, mix the crushed biscuits and melted butter. Press the mixture into the base of a 9-inch springform pan to form the crust. Chill in the refrigerator while preparing the filling.
- In a large bowl, beat the cream cheese, Greek yogurt, powdered sugar, and vanilla extract until smooth and creamy. Spread the mixture over the chilled biscuit base and smooth the top with a spatula. Chill in the refrigerator for 2 hours.
- In a saucepan, heat the Arctic berries and granulated sugar over low heat until the berries release their juices and the sugar is dissolved. In a small bowl, sprinkle the gelatin over the water and let it bloom for 5 minutes. Then, gently heat the gelatin mixture until it dissolves. Let it cool slightly.
- Pour the slightly cooled gelatin mixture over the berry mixture and stir to combine. Allow the berry mixture to cool to room temperature.
- Pour the berry mixture over the chilled cheesecake layer and spread it evenly. Return the cake to the refrigerator and chill for at least 2 hours, or until set.
- Once set, carefully remove the cheesecake from the springform pan and transfer it to a serving plate. Slice and serve chilled.
