Arctic Berry Crumble Bars

Ingredients

  • 2 cups arctic berries
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9x9 inch baking pan.
  2. In a medium bowl, mix the arctic berries, 1/4 cup sugar, and cornstarch. Set aside.
  3. In a separate bowl, combine the flour, 1/2 cup sugar, baking powder, and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  4. In a small bowl, prepare the flax egg by mixing the ground flaxseed and water. Let it sit for 5 minutes to thicken.
  5. Add the flax egg and vanilla extract to the flour mixture, and stir until combined.
  6. Press half of the crumb mixture into the bottom of the prepared baking pan. Spread the berry mixture over the crust. Crumble the remaining dough over the berries.
  7. Bake for 35-40 minutes, or until the top is golden brown. Allow to cool completely before cutting into bars.
