Ingredients
- 2 cups arctic berries
- 1/4 cup sugar
- 1 tablespoon cornstarch
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup cold unsalted butter, cut into small pieces
- 1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water)
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9x9 inch baking pan.
- In a medium bowl, mix the arctic berries, 1/4 cup sugar, and cornstarch. Set aside.
- In a separate bowl, combine the flour, 1/2 cup sugar, baking powder, and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- In a small bowl, prepare the flax egg by mixing the ground flaxseed and water. Let it sit for 5 minutes to thicken.
- Add the flax egg and vanilla extract to the flour mixture, and stir until combined.
- Press half of the crumb mixture into the bottom of the prepared baking pan. Spread the berry mixture over the crust. Crumble the remaining dough over the berries.
- Bake for 35-40 minutes, or until the top is golden brown. Allow to cool completely before cutting into bars.
