Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 1/2 cup ice water
  • 3 cups mixed Arctic berries (lingonberries, cloudberries, blueberries)
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large bowl, mix together the flour, 1/4 cup sugar, and salt. Add the cold butter and use a pastry cutter to mix until the mixture resembles coarse crumbs.
  2. Sprinkle ice water over the mixture and stir with a fork until the dough comes together. Shape the dough into a disk, wrap in plastic, and refrigerate for 30 minutes.
  3. Preheat the oven to 375°F (190°C). In a separate bowl, gently toss the Arctic berries with 1/4 cup sugar, cornstarch, and lemon juice.
  4. On a floured surface, roll out the chilled dough into a 12-inch circle. Transfer the dough to a parchment-lined baking sheet.
  5. Arrange the berry mixture in the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the berries, pleating as needed.
  6. Brush the edges of the dough with the beaten egg. Bake for 30-35 minutes, or until the crust is golden and the berries are bubbling.
  7. Let the galette cool for a few minutes before slicing. Serve warm and enjoy!
