Arctic Berry Muffins (Jäämarjamuffinit)
Jäämarjamuffinit, or Arctic Berry Muffins, are a traditional Sami cuisine delicacy that showcases the delicious flavors of the Arctic berries. These muffins are perfect for a cozy breakfast or a sweet treat with a cup of coffee.
Ingredients
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup mixed Arctic berries (lingonberries, cloudberries, or blueberries)
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, mix the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the melted butter, milk, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the mixed Arctic berries.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until the muffins are golden and a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
