Arctic Blueberry Cheesecake

Ingredients
- 2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup sour cream
- 3/4 cup granulated sugar
- 3 eggs
- 1 tsp vanilla extract
- 1 1/2 cups fresh or frozen blueberries
- 1/4 cup blueberry jam
Instructions
- Preheat the oven to 325°F (165°C). Grease a 9-inch springform pan.
- In a bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of the prepared pan.
- In a large bowl, beat the cream cheese, sour cream, and 3/4 cup sugar until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
- Gently fold in the blueberries and pour the mixture over the crust in the pan.
- Bake for 55-60 minutes or until the center is almost set. Remove from the oven and cool for 10 minutes. Carefully run a knife around the edge of the pan to loosen; cool 1 hour longer.
- Refrigerate overnight. Before serving, spread the blueberry jam over the top of the cheesecake.
