Arctic Char Cakes (Nieriäkakut)

Ingredients

  • 1 lb Arctic char, skinless and boneless
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped red onion
  • 1 egg, beaten
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large bowl, flake the Arctic char with a fork.
  2. Add breadcrumbs, dill, red onion, egg, mayonnaise, Dijon mustard, salt, and pepper. Mix until well combined.
  3. Form the mixture into 8 patties.
  4. Heat olive oil in a skillet over medium heat.
  5. Cook the patties for 3-4 minutes on each side, until golden brown and cooked through.
  6. Serve the Arctic char cakes hot with your favorite side dishes.
