Arctic Char Ceviche

Ingredients
- 1 lb Arctic char, skinless and boneless, cut into small cubes
- 1 cup fresh lime juice
- 1 red onion, thinly sliced
- 1-2 jalapeño peppers, seeded and minced
- 1 cup cherry tomatoes, halved
- 1/2 cup chopped cilantro
- Salt and pepper to taste
Instructions
- In a glass or stainless steel bowl, combine the Arctic char and lime juice. Make sure the fish is completely submerged in the juice. Cover and refrigerate for 15-20 minutes, or until the fish is opaque and "cooked" through.
- Once the fish is ready, drain off the lime juice. Add the red onion, jalapeño peppers, cherry tomatoes, and cilantro to the fish. Gently toss to combine. Season with salt and pepper to taste.
- Chill the ceviche for an additional 15-20 minutes before serving. This will allow the flavors to meld together.
