Arctic Char Chowder (Nieriäkeitto)

Ingredients

  • 500g Arctic char fillets, cut into chunks
  • 3 large potatoes, diced
  • 2 carrots, sliced
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 4 cups fish or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onion and celery, and sauté until softened.
  2. Add the potatoes, carrots, and broth to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the vegetables are tender.
  3. Add the Arctic char chunks to the pot and cook for an additional 5 minutes, or until the fish is cooked through.
  4. Pour in the heavy cream and stir gently to combine. Season with salt and pepper to taste.
  5. Serve the Nieriäkeitto hot, garnished with fresh herbs if desired.
