Ingredients
- 1 lb Arctic char fillet, skin-on
- 1/4 cup sea salt
- 1/4 cup granulated sugar
- 1 tablespoon crushed black peppercorns
- 1 bunch fresh dill, chopped
Instructions
- Combine the sea salt, sugar, crushed black peppercorns, and fresh dill in a bowl.
- Place the Arctic char fillet, skin-side down, on a large piece of plastic wrap.
- Spread the salt and sugar mixture evenly over the flesh of the fish.
- Wrap the fish tightly in the plastic wrap and place it in a shallow dish.
- Place a weight on top of the fish, such as a heavy plate or cans, and refrigerate for 48 hours, flipping the fish every 12 hours.
- Unwrap the fish, rinse off the curing mixture, and pat the fish dry with paper towels.
- Slice the gravlax thinly at an angle and serve.
