Arctic Char Gravlax

Ingredients

  • 1 lb Arctic char fillet, skin-on
  • 1/4 cup sea salt
  • 1/4 cup granulated sugar
  • 1 tablespoon crushed black peppercorns
  • 1 bunch fresh dill, chopped

Instructions

  1. Combine the sea salt, sugar, crushed black peppercorns, and fresh dill in a bowl.
  2. Place the Arctic char fillet, skin-side down, on a large piece of plastic wrap.
  3. Spread the salt and sugar mixture evenly over the flesh of the fish.
  4. Wrap the fish tightly in the plastic wrap and place it in a shallow dish.
  5. Place a weight on top of the fish, such as a heavy plate or cans, and refrigerate for 48 hours, flipping the fish every 12 hours.
  6. Unwrap the fish, rinse off the curing mixture, and pat the fish dry with paper towels.
  7. Slice the gravlax thinly at an angle and serve.
