Arctic Char Sushi Rolls (Nieriäsushirullat)

Ingredients

  • 4 sheets of nori seaweed
  • 2 cups sushi rice
  • 1 pound Arctic Char, thinly sliced
  • 1 cucumber, julienned
  • 1 avocado, sliced
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • Soy sauce, for serving
  • Wasabi, for serving
  • Pickled ginger, for serving

Instructions

  1. Prepare the sushi rice according to package instructions, then let it cool.
  2. In a small bowl, mix the rice vinegar, sugar, and salt. Drizzle this mixture over the cooled rice and gently fold to combine.
  3. Place a sheet of nori on a bamboo sushi mat. Spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.
  4. Arrange the Arctic Char, cucumber, and avocado in a line across the center of the rice.
  5. Roll the sushi tightly using the bamboo mat, sealing the edge with a little water.
  6. Slice the roll into 6-8 pieces using a sharp knife.
  7. Repeat with the remaining ingredients.
  8. Serve the sushi rolls with soy sauce, wasabi, and pickled ginger.
