Arctic Fox Empanadas
Arctic Fox Empanadas are a delicious and hearty dish from the Commander Islands cuisine. These savory pastries are filled with a flavorful mixture of Arctic fox meat, vegetables, and spices, and then baked to golden perfection.
Ingredients
- 2 cups diced Arctic fox meat
- 1 onion, finely chopped
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 package of store-bought empanada dough
- 1 egg, beaten (for egg wash)
Instructions
- In a skillet, cook the diced Arctic fox meat over medium heat until browned. Remove from the skillet and set aside.
- In the same skillet, sauté the onion, bell pepper, and garlic until softened.
- Return the cooked Arctic fox meat to the skillet. Add the cumin, paprika, salt, and pepper. Stir to combine and remove from heat.
- Preheat the oven to 375°F (190°C).
- Roll out the empanada dough and cut it into circles using a round cutter or a small plate as a guide.
- Place a spoonful of the Arctic fox filling in the center of each dough circle. Fold the dough over the filling and crimp the edges with a fork to seal.
- Brush the empanadas with the beaten egg wash.
- Place the empanadas on a baking sheet and bake for 20-25 minutes, or until golden brown.
- Remove from the oven and let cool slightly before serving.
