Arctic Fox Empanadas

Ingredients

  • 2 cups diced Arctic fox meat
  • 1 onion, finely chopped
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 package of store-bought empanada dough
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a skillet, cook the diced Arctic fox meat over medium heat until browned. Remove from the skillet and set aside.
  2. In the same skillet, sauté the onion, bell pepper, and garlic until softened.
  3. Return the cooked Arctic fox meat to the skillet. Add the cumin, paprika, salt, and pepper. Stir to combine and remove from heat.
  4. Preheat the oven to 375°F (190°C).
  5. Roll out the empanada dough and cut it into circles using a round cutter or a small plate as a guide.
  6. Place a spoonful of the Arctic fox filling in the center of each dough circle. Fold the dough over the filling and crimp the edges with a fork to seal.
  7. Brush the empanadas with the beaten egg wash.
  8. Place the empanadas on a baking sheet and bake for 20-25 minutes, or until golden brown.
  9. Remove from the oven and let cool slightly before serving.
