Ingredients

  • 6 large bell peppers
  • 1 lb ground beef or lamb
  • 1 cup uncooked rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups tomato sauce
  • 1 cup chicken or vegetable broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, mix together the ground meat, rice, onion, tomatoes, parsley, garlic, paprika, salt, and pepper.
  4. Stuff the bell peppers with the meat and rice mixture.
  5. Place the stuffed peppers in a deep pot or Dutch oven.
  6. In a separate bowl, mix the tomato sauce and broth, then pour over the stuffed peppers.
  7. Cover the pot and cook on the stovetop over medium heat for 1 hour, or until the peppers are tender and the filling is cooked through.
  8. Serve the stuffed peppers hot, with a side of crusty bread or a fresh salad.
