Ingredients
- 6 large bell peppers
- 1 lb ground beef or lamb
- 1 cup uncooked rice
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 cups tomato sauce
- 1 cup chicken or vegetable broth
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, mix together the ground meat, rice, onion, tomatoes, parsley, garlic, paprika, salt, and pepper.
- Stuff the bell peppers with the meat and rice mixture.
- Place the stuffed peppers in a deep pot or Dutch oven.
- In a separate bowl, mix the tomato sauce and broth, then pour over the stuffed peppers.
- Cover the pot and cook on the stovetop over medium heat for 1 hour, or until the peppers are tender and the filling is cooked through.
- Serve the stuffed peppers hot, with a side of crusty bread or a fresh salad.
