Ardei Umpluti (aromatic Stuffed Peppers)
Ardei umpluti, or Aromatic Stuffed Peppers, are a traditional dish in Aromanian cuisine, known for their flavorful filling and vibrant colors. This recipe is a delightful combination of ground meat, rice, and aromatic herbs, all stuffed into sweet bell peppers and cooked to perfection.
Ingredients
- 4 large bell peppers
- 1 lb ground meat (beef or pork)
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tomato, diced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh dill
- Salt and pepper to taste
- 1/4 cup olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, mix together the ground meat, cooked rice, onion, garlic, tomato, parsley, dill, salt, and pepper.
- Stuff the bell peppers with the meat and rice mixture.
- Place the stuffed peppers in a deep baking dish, drizzle with olive oil, and add a little water to the bottom of the dish.
- Cover the dish with foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the peppers are tender and the filling is cooked through.
- Serve the aromatic stuffed peppers hot and enjoy!
