Ingredients
- 2 lbs yuca (cassava), peeled and grated
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1/4 cup cilantro, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- Vegetable oil for frying
Instructions
- In a large bowl, mix the grated yuca, chopped onion, minced garlic, cilantro, salt, and black pepper until well combined.
- Form the mixture into small patties or balls, about 2 inches in diameter.
- In a large skillet, heat vegetable oil over medium heat.
- Carefully place the yuca patties or balls into the hot oil and fry until golden brown, about 3-4 minutes per side.
- Remove the fritters from the oil and place them on a paper towel-lined plate to drain any excess oil.
- Serve the arepa de yuca hot and enjoy!
