Arepas De Choclo: Colombian Sweet Corn Cakes

Ingredients

  • 2 cups fresh or frozen sweet corn kernels
  • 1 cup pre-cooked cornmeal (masarepa)
  • 1 cup milk
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1/4 cup butter

Instructions

  1. In a blender, combine the sweet corn kernels and milk. Blend until smooth.
  2. In a mixing bowl, combine the corn puree, pre-cooked cornmeal, sugar, and salt. Mix well to form a smooth batter.
  3. Heat a non-stick skillet or griddle over medium heat and melt a small amount of butter.
  4. Spoon the batter onto the skillet to form small round cakes, about 1/4 inch thick.
  5. Cook for 3-4 minutes on each side, or until golden brown and crispy.
  6. Remove from the skillet and let cool slightly before serving.
