Ingredients
- 2 cups pre-cooked cornmeal
- 1 1/2 cups water
- 1 cup fresh corn kernels
- 1 cup shredded mozzarella cheese
- 1/2 teaspoon salt
Instructions
- In a bowl, mix the pre-cooked cornmeal, water, and salt to form a dough.
- Add the fresh corn kernels to the dough and mix well.
- Divide the dough into 6 equal portions and form them into thick patties.
- Make a small indentation in the center of each patty and fill it with the shredded mozzarella cheese.
- Carefully seal the edges to enclose the cheese filling.
- Heat a non-stick skillet over medium heat and cook the arepas for about 7-8 minutes on each side, or until golden brown and crispy.
- Remove from the skillet and let them cool for a few minutes before serving.
