Ingredients

  • 2 cups pre-cooked cornmeal
  • 1 1/2 cups water
  • 1 cup fresh corn kernels
  • 1 cup shredded mozzarella cheese
  • 1/2 teaspoon salt

Instructions

  1. In a bowl, mix the pre-cooked cornmeal, water, and salt to form a dough.
  2. Add the fresh corn kernels to the dough and mix well.
  3. Divide the dough into 6 equal portions and form them into thick patties.
  4. Make a small indentation in the center of each patty and fill it with the shredded mozzarella cheese.
  5. Carefully seal the edges to enclose the cheese filling.
  6. Heat a non-stick skillet over medium heat and cook the arepas for about 7-8 minutes on each side, or until golden brown and crispy.
  7. Remove from the skillet and let them cool for a few minutes before serving.
