Arepas Rellenas de Chorizo, or Chorizo-stuffed Arepas, are a delicious traditional dish from Muisca Cuisine. These savory corn cakes filled with flavorful chorizo are a popular choice for breakfast or as a snack.
Ingredients
- 2 cups pre-cooked cornmeal
- 1 1/2 cups warm water
- 1/2 teaspoon salt
- 1 cup crumbled chorizo
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons vegetable oil
Instructions
- In a large bowl, mix the pre-cooked cornmeal, warm water, and salt to form a dough.
- Divide the dough into 8 equal portions and shape them into balls. Flatten each ball to form a patty.
- In a skillet, cook the crumbled chorizo until browned. Drain any excess fat and set aside.
- Place a spoonful of the cooked chorizo and a sprinkle of mozzarella cheese on 4 of the corn patties. Top with the remaining 4 patties and press the edges to seal.
- Heat the vegetable oil in a skillet over medium heat. Cook the stuffed arepas for 5-7 minutes on each side, or until golden brown and crispy.
- Remove from the skillet and drain on paper towels before serving.
