Ingredients

  • 2 cups pre-cooked cornmeal
  • 1 1/2 cups warm water
  • 1/2 teaspoon salt
  • 1 cup crumbled chorizo
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons vegetable oil

Instructions

  1. In a large bowl, mix the pre-cooked cornmeal, warm water, and salt to form a dough.
  2. Divide the dough into 8 equal portions and shape them into balls. Flatten each ball to form a patty.
  3. In a skillet, cook the crumbled chorizo until browned. Drain any excess fat and set aside.
  4. Place a spoonful of the cooked chorizo and a sprinkle of mozzarella cheese on 4 of the corn patties. Top with the remaining 4 patties and press the edges to seal.
  5. Heat the vegetable oil in a skillet over medium heat. Cook the stuffed arepas for 5-7 minutes on each side, or until golden brown and crispy.
  6. Remove from the skillet and drain on paper towels before serving.
