Argentina Empanadas

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 1/2 cup warm water
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 1 red bell pepper, diced
  • 1 pound ground beef
  • 2 hard-boiled eggs, chopped
  • 1/2 cup green olives, pitted and chopped
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add the water, tossing with a fork until the dough holds together. Shape into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.
  2. Heat the olive oil in a skillet over medium heat. Add the onion and red bell pepper, and cook until softened. Add the ground beef and cook until browned. Drain any excess fat.
  3. Stir in the chopped hard-boiled eggs, green olives, paprika, salt, and pepper. Remove from heat and let the filling cool.
  4. Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface and cut out circles using a round cutter or a small plate. Place a spoonful of the filling in the center of each circle. Fold the dough over the filling and crimp the edges with a fork to seal.
  5. Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with egg wash and bake for 20-25 minutes, or until golden brown.
