Argentina Empanadas

Ingredients
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1/2 cup warm water
- 1 teaspoon salt
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 1 red bell pepper, diced
- 1 pound ground beef
- 2 hard-boiled eggs, chopped
- 1/2 cup green olives, pitted and chopped
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- In a large bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add the water, tossing with a fork until the dough holds together. Shape into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.
- Heat the olive oil in a skillet over medium heat. Add the onion and red bell pepper, and cook until softened. Add the ground beef and cook until browned. Drain any excess fat.
- Stir in the chopped hard-boiled eggs, green olives, paprika, salt, and pepper. Remove from heat and let the filling cool.
- Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface and cut out circles using a round cutter or a small plate. Place a spoonful of the filling in the center of each circle. Fold the dough over the filling and crimp the edges with a fork to seal.
- Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with egg wash and bake for 20-25 minutes, or until golden brown.
