Armenian Cheese Borek (Börek)
Börek, also known as Armenian Cheese Borek, is a delicious savory pastry that is popular in Armenian cuisine. It is made with flaky phyllo dough and a savory cheese filling, making it a perfect appetizer or snack.
Ingredients
- 1 package of phyllo dough
- 1 cup feta cheese, crumbled
- 1 cup mozzarella cheese, shredded
- 1/2 cup unsalted butter, melted
- 1/4 cup fresh parsley, chopped
- 1/4 teaspoon black pepper
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together the feta cheese, mozzarella cheese, parsley, and black pepper.
- Unroll the phyllo dough and place a damp towel over it to prevent it from drying out.
- Brush a sheet of phyllo dough with melted butter, then place another sheet on top and brush with butter again. Repeat this process to create a stack of 5 sheets.
- Spread a thin layer of the cheese mixture over the phyllo stack, leaving a border around the edges.
- Roll the phyllo stack into a log, then coil it into a spiral shape and tuck the end underneath.
- Place the börek on a baking sheet lined with parchment paper, brush the top with the beaten egg, and bake for 25-30 minutes or until golden brown.
- Allow the börek to cool for a few minutes before serving.
