Armenian Lentil and Spinach Soup (Mercimek Çorbası)

Ingredients

  • 1 cup red lentils
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 6 cups vegetable broth
  • 4 cups fresh spinach, chopped
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic, cumin, and paprika. Cook for another 2 minutes.
  3. Rinse the red lentils and add them to the pot. Stir to combine with the onion and spices.
  4. Pour in the vegetable broth and bring the soup to a boil. Reduce the heat and let it simmer for 15 minutes, or until the lentils are tender.
  5. Add the chopped spinach to the pot and cook for an additional 5 minutes.
  6. Season the soup with salt and pepper to taste.
  7. Serve the Mercimek Çorbası hot, garnished with a drizzle of olive oil and a sprinkle of red pepper flakes if desired.
