Armenian Lentil and Spinach Soup (Mercimek Çorbası)
Mercimek Çorbası is a traditional Armenian lentil and spinach soup that is both nutritious and delicious. This hearty soup is perfect for a comforting meal on a cold day.
Ingredients
- 1 cup red lentils
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp cumin
- 1/2 tsp paprika
- 6 cups vegetable broth
- 4 cups fresh spinach, chopped
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic, cumin, and paprika. Cook for another 2 minutes.
- Rinse the red lentils and add them to the pot. Stir to combine with the onion and spices.
- Pour in the vegetable broth and bring the soup to a boil. Reduce the heat and let it simmer for 15 minutes, or until the lentils are tender.
- Add the chopped spinach to the pot and cook for an additional 5 minutes.
- Season the soup with salt and pepper to taste.
- Serve the Mercimek Çorbası hot, garnished with a drizzle of olive oil and a sprinkle of red pepper flakes if desired.
