Ingredients

  • 1.5 kg lamb, cut into chunks
  • 500g okra, trimmed
  • 3 large onions, chopped
  • 4 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 cup red wine
  • 4 tomatoes, diced
  • 1 cinnamon stick
  • 4-5 cloves
  • 1 bay leaf
  • Salt and pepper to taste
  • 3 tbsp olive oil
  • 1 cup water

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the lamb chunks and brown them on all sides.
  2. Add the chopped onions and garlic to the pot and cook until softened.
  3. Stir in the tomato paste and cook for 2 minutes.
  4. Pour in the red wine and allow it to simmer for 5 minutes.
  5. Add the diced tomatoes, cinnamon stick, cloves, bay leaf, salt, and pepper. Pour in the water, cover the pot, and let it simmer for 1.5 hours.
  6. Add the trimmed okra to the pot and continue to simmer for another 30 minutes, or until the lamb is tender and the okra is cooked through.
  7. Adjust the seasoning if needed and serve the stew hot.
