Arnaki Me Bamies Stifado (epirotic Lamb And Okra Stew)
Arnaki me bamies stifado is a traditional Epirotic lamb and okra stew that is packed with flavor and hearty ingredients. This slow-cooked stew is perfect for a cozy family dinner or a special occasion.
Ingredients
- 1.5 kg lamb, cut into chunks
- 500g okra, trimmed
- 3 large onions, chopped
- 4 garlic cloves, minced
- 2 tbsp tomato paste
- 1 cup red wine
- 4 tomatoes, diced
- 1 cinnamon stick
- 4-5 cloves
- 1 bay leaf
- Salt and pepper to taste
- 3 tbsp olive oil
- 1 cup water
Instructions
- In a large pot, heat the olive oil over medium heat. Add the lamb chunks and brown them on all sides.
- Add the chopped onions and garlic to the pot and cook until softened.
- Stir in the tomato paste and cook for 2 minutes.
- Pour in the red wine and allow it to simmer for 5 minutes.
- Add the diced tomatoes, cinnamon stick, cloves, bay leaf, salt, and pepper. Pour in the water, cover the pot, and let it simmer for 1.5 hours.
- Add the trimmed okra to the pot and continue to simmer for another 30 minutes, or until the lamb is tender and the okra is cooked through.
- Adjust the seasoning if needed and serve the stew hot.
