Ingredients

  • 1 1/2 lbs (680g) lamb, cut into cubes
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 cup (200g) orzo pasta
  • 8 cups (1.9L) chicken or vegetable broth
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, brown the lamb over medium-high heat for 5-7 minutes.
  2. Add the chopped onion, carrots, and celery, and cook for another 5 minutes.
  3. Stir in the minced garlic and orzo pasta, and cook for 2 minutes.
  4. Pour in the broth, add the bay leaf, and season with salt and pepper. Bring to a boil, then reduce the heat and simmer for 45 minutes.
  5. Remove the bay leaf and adjust the seasoning if needed.
  6. Serve the soup hot, garnished with fresh parsley.
