Ingredients
- 1 1/2 lbs (680g) lamb, cut into cubes
- 1 onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 cup (200g) orzo pasta
- 8 cups (1.9L) chicken or vegetable broth
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, brown the lamb over medium-high heat for 5-7 minutes.
- Add the chopped onion, carrots, and celery, and cook for another 5 minutes.
- Stir in the minced garlic and orzo pasta, and cook for 2 minutes.
- Pour in the broth, add the bay leaf, and season with salt and pepper. Bring to a boil, then reduce the heat and simmer for 45 minutes.
- Remove the bay leaf and adjust the seasoning if needed.
- Serve the soup hot, garnished with fresh parsley.
