Arnaki me revithia stifado is a traditional Epirotic stew featuring tender lamb and hearty chickpeas, simmered in a rich tomato-based sauce. This comforting dish is perfect for a cozy family meal or a gathering with friends.
Ingredients
- 1.5 lbs lamb, cut into chunks
- 1 cup dried chickpeas, soaked overnight
- 2 onions, chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 1/2 cup red wine
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- 1/2 tsp ground cinnamon
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the lamb chunks and brown them on all sides.
- Add the chopped onions and minced garlic to the pot. Cook until the onions are soft and translucent.
- Stir in the diced tomatoes, red wine, red wine vinegar, dried oregano, ground cinnamon, salt, and pepper.
- Drain the soaked chickpeas and add them to the pot.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 2 hours, or until the lamb is tender and the chickpeas are cooked through.
- Adjust the seasoning if needed, then serve the stifado hot, garnished with fresh herbs if desired.
