Aromatic Lamb Rogan Josh

Ingredients

  • 1 kg lamb, cut into cubes
  • 3 tbsp vegetable oil
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 1-inch ginger, grated
  • 2 tomatoes, pureed
  • 1 cup plain yogurt
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • 1 cinnamon stick
  • 4 cardamom pods
  • Salt to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and cook until they are soft and translucent.
  2. Add the minced garlic and grated ginger to the pot and cook for another 2 minutes.
  3. Stir in the ground cumin, ground coriander, turmeric, paprika, and cayenne pepper. Cook for 1 minute to toast the spices.
  4. Add the cubed lamb to the pot and brown on all sides.
  5. Pour in the pureed tomatoes and add the cinnamon stick and cardamom pods. Season with salt and stir well.
  6. Reduce the heat, cover the pot, and let the lamb simmer for 45-60 minutes, or until tender.
  7. Once the lamb is cooked, stir in the plain yogurt and cook for an additional 5 minutes.
  8. Garnish with fresh cilantro before serving.
