Aromatic Lamb Rogan Josh is a classic Anglo-Indian dish known for its rich and flavorful sauce. This recipe combines tender lamb with a blend of aromatic spices, creating a dish that is perfect for a special occasion or a comforting family meal.
Ingredients
- 1 kg lamb, cut into cubes
- 3 tbsp vegetable oil
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 1-inch ginger, grated
- 2 tomatoes, pureed
- 1 cup plain yogurt
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp turmeric
- 1 tsp paprika
- 1 tsp cayenne pepper
- 1 cinnamon stick
- 4 cardamom pods
- Salt to taste
- Fresh cilantro, for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and cook until they are soft and translucent.
- Add the minced garlic and grated ginger to the pot and cook for another 2 minutes.
- Stir in the ground cumin, ground coriander, turmeric, paprika, and cayenne pepper. Cook for 1 minute to toast the spices.
- Add the cubed lamb to the pot and brown on all sides.
- Pour in the pureed tomatoes and add the cinnamon stick and cardamom pods. Season with salt and stir well.
- Reduce the heat, cover the pot, and let the lamb simmer for 45-60 minutes, or until tender.
- Once the lamb is cooked, stir in the plain yogurt and cook for an additional 5 minutes.
- Garnish with fresh cilantro before serving.
