Arrosticini Di Pollo: Molisan Chicken Skewers
Arrosticini di Pollo, or Molisan Chicken Skewers, are a traditional dish from the Abruzzo and Molise regions of Italy. These delicious skewers are perfect for a summer barbecue or a cozy indoor meal. Ingredients
- 1.5 lbs (700g) chicken breast, cut into 1-inch cubes
- 1/4 cup (60ml) olive oil
- 3 cloves garlic, minced
- 2 tablespoons (30ml) lemon juice
- 1 teaspoon (5ml) dried oregano
- Salt and pepper to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a bowl, combine the olive oil, minced garlic, lemon juice, dried oregano, salt, and pepper.
- Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken cubes onto the soaked wooden skewers.
- Grill the skewers for 4-5 minutes on each side, or until the chicken is cooked through and has a nice char.
- Remove from the grill and let rest for a few minutes before serving.
