Arrosticini Di Pollo: Molisan Chicken Skewers

Ingredients

  • 1.5 lbs (700g) chicken breast, cut into 1-inch cubes
  • 1/4 cup (60ml) olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons (30ml) lemon juice
  • 1 teaspoon (5ml) dried oregano
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, combine the olive oil, minced garlic, lemon juice, dried oregano, salt, and pepper.
  2. Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken cubes onto the soaked wooden skewers.
  5. Grill the skewers for 4-5 minutes on each side, or until the chicken is cooked through and has a nice char.
  6. Remove from the grill and let rest for a few minutes before serving.
