Ingredients
- 2 cups long-grain white rice
- 4 cups chicken broth

- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 cup frozen peas
- 1 cup cooked corn kernels

- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chicken and chorizo, and cook until browned.
- Add the onion, garlic, and red bell pepper. Cook until the vegetables are softened.
- Stir in the rice, tomatoes, cumin, paprika, and season with salt and pepper. Cook for 2 minutes.
- Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for 20 minutes.
