Ingredients
- 3 cups cooked white rice
- 2 eggs, beaten
- 1 cup diced cooked chicken or pork
- 1/2 cup diced red bell pepper
- 1/2 cup diced green onions
- 1/4 cup soy sauce
- 2 tablespoons vegetable oil
- 1 teaspoon minced garlic
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the beaten eggs and scramble until cooked. Remove from the skillet and set aside.
- Heat the remaining 1 tablespoon of vegetable oil in the same skillet.
- Add the diced chicken or pork, red bell pepper, green onions, and minced garlic. Stir-fry for 2-3 minutes.
- Add the cooked rice to the skillet and stir to combine with the other ingredients.
- Pour the soy sauce over the rice and mix well. Cook for an additional 2-3 minutes.
- Add the scrambled eggs, ground cumin, paprika, salt, and pepper. Stir-fry for another 2 minutes.
- Remove from heat and serve hot.
