Arroz Chaufa (Chinese-Peruvian Fried Rice)

Ingredients

  • 3 cups cooked white rice
  • 2 eggs, beaten
  • 1 cup diced cooked chicken or pork
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green onions
  • 1/4 cup soy sauce
  • 2 tablespoons vegetable oil
  • 1 teaspoon minced garlic
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the beaten eggs and scramble until cooked. Remove from the skillet and set aside.
  3. Heat the remaining 1 tablespoon of vegetable oil in the same skillet.
  4. Add the diced chicken or pork, red bell pepper, green onions, and minced garlic. Stir-fry for 2-3 minutes.
  5. Add the cooked rice to the skillet and stir to combine with the other ingredients.
  6. Pour the soy sauce over the rice and mix well. Cook for an additional 2-3 minutes.
  7. Add the scrambled eggs, ground cumin, paprika, salt, and pepper. Stir-fry for another 2 minutes.
  8. Remove from heat and serve hot.
