Ingredients
- 2 cups of white rice
- 1 3/4 cups of coconut milk
- 1 1/4 cups of water
- 1/2 teaspoon of salt
- 1/4 cup of shredded coconut
Instructions
- In a large pot, combine the rice, coconut milk, water, and salt.
- Bring the mixture to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover the pot, and let the rice simmer for 18-20 minutes, or until the liquid is absorbed and the rice is tender.
- Fluff the rice with a fork and stir in the shredded coconut.
- Remove the pot from the heat and let the rice sit, covered, for an additional 5 minutes.
