Ingredients

Instructions

  1. In a saucepan, combine the rice and water. Bring to a boil, then reduce heat, cover, and simmer for 18 minutes.
  2. Stir in the coconut milk, whole milk, and cinnamon stick. Simmer uncovered over low heat for 15 minutes, stirring occasionally.
  3. Stir in the sugar, salt, and vanilla extract. Cook and stir for an additional 10 minutes, or until the mixture thickens.
  4. Remove the cinnamon stick and let the rice pudding cool for a few minutes before serving.
