Ingredients
- 1 cup of white rice
- 2 cups of water
- 1 can (14 oz) of coconut milk
- 1 cup of whole milk
- 1 cinnamon stick
- 1 cup of sugar
- 1/2 teaspoon of salt
- 1 teaspoon of vanilla extract
Instructions
- In a saucepan, combine the rice and water. Bring to a boil, then reduce heat, cover, and simmer for 18 minutes.
- Stir in the coconut milk, whole milk, and cinnamon stick. Simmer uncovered over low heat for 15 minutes, stirring occasionally.
- Stir in the sugar, salt, and vanilla extract. Cook and stir for an additional 10 minutes, or until the mixture thickens.
- Remove the cinnamon stick and let the rice pudding cool for a few minutes before serving.
