Instructions
- In a large pan, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper. Cook until softened.
- Add the rice to the pan and stir to coat it with the oil and vegetables.

- Pour in the seafood or chicken broth and bring to a simmer. Cover and cook for 15 minutes.
- Add the mixed seafood and frozen peas to the pan. Cover and cook for an additional 10-15 minutes, or until the seafood is cooked through and the rice is tender.
- Garnish with fresh parsley before serving.
