Arroz Con Mariscos (honduran Seafood Rice)

Ingredients

  • 1 lb mixed seafood (shrimp, squid, mussels)
  • 2 cups long-grain white rice
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup frozen peas
  • 2 tomatoes, diced
  • 3 cups fish or seafood broth
  • 1/4 cup chopped cilantro
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Lime wedges for serving

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onion, garlic, and red bell pepper. Cook until softened.
  2. Add the rice to the pot and stir to coat with the vegetables. Cook for 2 minutes.
  3. Stir in the tomatoes, peas, cumin, paprika, and a pinch of salt and pepper.
  4. Pour in the fish or seafood broth and bring to a boil. Reduce heat, cover, and simmer for 20 minutes.
  5. While the rice is cooking, season the mixed seafood with salt and pepper. In a separate pan, sauté the seafood until cooked through.
  6. Once the rice is cooked, gently fold in the cooked seafood and chopped cilantro.
  7. Serve the Arroz con Mariscos with lime wedges on the side.
