Ingredients
- 1 lb mixed seafood (shrimp, squid, mussels)
- 2 cups long-grain white rice
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup frozen peas
- 2 tomatoes, diced
- 3 cups fish or seafood broth
- 1/4 cup chopped cilantro
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Lime wedges for serving
Instructions
- In a large pot, heat some oil over medium heat. Add the onion, garlic, and red bell pepper. Cook until softened.
- Add the rice to the pot and stir to coat with the vegetables. Cook for 2 minutes.
- Stir in the tomatoes, peas, cumin, paprika, and a pinch of salt and pepper.
- Pour in the fish or seafood broth and bring to a boil. Reduce heat, cover, and simmer for 20 minutes.
- While the rice is cooking, season the mixed seafood with salt and pepper. In a separate pan, sauté the seafood until cooked through.
- Once the rice is cooked, gently fold in the cooked seafood and chopped cilantro.
- Serve the Arroz con Mariscos with lime wedges on the side.
