Ingredients
- 1 cup long-grain white rice
- 1 pound mixed seafood (shrimp, squid, mussels)
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup coconut milk
- 1 cup vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 lime, juiced
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large skillet, heat some oil over medium heat. Add the onion, garlic, and red bell pepper. Sauté until the vegetables are soft.
- Add the rice to the skillet and stir to coat with the vegetable mixture.
- Pour in the coconut milk and vegetable broth. Add the cumin, paprika, and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes.
- While the rice is cooking, prepare the seafood. In a separate pan, sauté the seafood with a squeeze of lime juice, salt, and pepper until cooked through.
- Once the rice is cooked, fluff it with a fork and gently fold in the cooked seafood.
- Divide the Arroz con Mariscos into bowls, garnish with fresh cilantro, and serve hot.
