Ingredients

  • 1 cup long-grain white rice
  • 1 pound mixed seafood (shrimp, squid, mussels)

  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup coconut milk
  • 1 cup vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 lime, juiced
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet, heat some oil over medium heat. Add the onion, garlic, and red bell pepper. Sauté until the vegetables are soft.
  2. Add the rice to the skillet and stir to coat with the vegetable mixture.
  3. Pour in the coconut milk and vegetable broth. Add the cumin, paprika, and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes.
  4. While the rice is cooking, prepare the seafood. In a separate pan, sauté the seafood with a squeeze of lime juice, salt, and pepper until cooked through.
  5. Once the rice is cooked, fluff it with a fork and gently fold in the cooked seafood.
