Ingredients
- 4 chicken thighs, bone-in and skin-on
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 cup long-grain white rice
- 1 3/4 cups chicken broth
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1 cup frozen peas
- 1/4 cup chopped fresh cilantro
Instructions
- Season the chicken thighs with salt and pepper.
- In a large pot, heat the vegetable oil over medium-high heat. Add the chicken thighs and cook until golden brown, about 4 minutes per side. Remove the chicken from the pot and set aside.
- In the same pot, add the chopped onion, garlic, and red bell pepper. Cook until the vegetables are softened, about 5 minutes.
- Add the rice to the pot and stir to coat it with the vegetable mixture.
- Pour in the chicken broth and add the ground cumin and paprika. Stir to combine.
- Place the chicken thighs back into the pot, nestling them into the rice mixture. Bring the liquid to a boil, then reduce the heat to low, cover the pot, and simmer for 20 minutes.
- After 20 minutes, add the frozen peas to the pot and continue to cook for an additional 5 minutes, or until the rice is tender and the chicken is cooked through.
- Sprinkle the chopped cilantro over the top before serving.
