Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 cup long-grain white rice
  • 1 3/4 cups chicken broth
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1 cup frozen peas
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. In a large pot, heat the vegetable oil over medium-high heat. Add the chicken thighs and cook until golden brown, about 4 minutes per side. Remove the chicken from the pot and set aside.
  3. In the same pot, add the chopped onion, garlic, and red bell pepper. Cook until the vegetables are softened, about 5 minutes.
  4. Add the rice to the pot and stir to coat it with the vegetable mixture.
  5. Pour in the chicken broth and add the ground cumin and paprika. Stir to combine.
  6. Place the chicken thighs back into the pot, nestling them into the rice mixture. Bring the liquid to a boil, then reduce the heat to low, cover the pot, and simmer for 20 minutes.
  7. After 20 minutes, add the frozen peas to the pot and continue to cook for an additional 5 minutes, or until the rice is tender and the chicken is cooked through.
