Ingredients

  • 2 lbs chicken thighs
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 bell pepper, diced
  • 1 cup long-grain rice
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp oregano
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with salt, pepper, and paprika.
  2. In a large skillet, brown the chicken on both sides. Remove and set aside.
  3. In the same skillet, sauté the onion, garlic, and bell pepper until softened.
  4. Add the rice, diced tomatoes, chicken broth, cumin, oregano, and salt. Stir to combine.
  5. Place the browned chicken on top of the rice mixture.
  6. Cover and simmer for 20-25 minutes, or until the rice is cooked and the chicken is tender.
  7. Sprinkle with fresh cilantro before serving.
