Ingredients
- 2 lbs chicken thighs
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 bell pepper, diced
- 1 cup long-grain rice
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth

- 1 tsp paprika
- 1/2 tsp oregano
- Salt and pepper to taste

Instructions
- Season the chicken thighs with salt, pepper, and paprika.
- In a large skillet, brown the chicken on both sides. Remove and set aside.
- In the same skillet, sauté the onion, garlic, and bell pepper until softened.
- Add the rice, diced tomatoes, chicken broth, cumin, oregano, and salt. Stir to combine.
- Place the browned chicken on top of the rice mixture.
- Cover and simmer for 20-25 minutes, or until the rice is cooked and the chicken is tender.
