Arroz Con Pollo Mexican
Arroz con pollo, or chicken with rice, is a classic Mexican dish that is both flavorful and comforting. This one-pot meal is perfect for a family dinner or a gathering with friends.
Ingredients
- 1 1/2 lbs chicken thighs
- 1 cup long-grain white rice
- 1 onion, chopped
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 2 cups chicken broth
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp oregano
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large skillet, brown the chicken thighs on both sides. Remove from the skillet and set aside.
- In the same skillet, sauté the onion, bell pepper, and garlic until softened.
- Add the rice, diced tomatoes, chicken broth, cumin, paprika, oregano, salt, and pepper to the skillet. Stir to combine.
- Place the browned chicken thighs on top of the rice mixture. Cover and simmer for 25-30 minutes, or until the rice is cooked and the chicken is tender.
- Garnish with fresh cilantro before serving.
