Arroz Con Pollo Mexican

Ingredients

  • 1 1/2 lbs chicken thighs
  • 1 cup long-grain white rice
  • 1 onion, chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp oregano
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet, brown the chicken thighs on both sides. Remove from the skillet and set aside.
  2. In the same skillet, sauté the onion, bell pepper, and garlic until softened.
  3. Add the rice, diced tomatoes, chicken broth, cumin, paprika, oregano, salt, and pepper to the skillet. Stir to combine.
  4. Place the browned chicken thighs on top of the rice mixture. Cover and simmer for 25-30 minutes, or until the rice is cooked and the chicken is tender.
  5. Garnish with fresh cilantro before serving.
