Ingredients
- 2 lbs chicken thighs, bone-in and skin-on
- 1 cup sofrito (store-bought or homemade)
- 2 cups long-grain white rice
- 3 cups chicken broth

- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup frozen peas
- 1 red bell pepper, diced
- 1/4 cup pimento-stuffed olives
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 onion, finely chopped
Instructions
- Season the chicken thighs with salt, pepper, cumin, oregano, and paprika.
- In a large pot, heat the olive oil over medium heat. Add the seasoned chicken thighs and cook until browned on both sides. Remove the chicken from the pot and set aside.
- In the same pot, sauté the garlic and onion until softened. Add the sofrito and cook for a few minutes.
- Stir in the rice, then add the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for 20 minutes.
- Return the chicken to the pot, along with the peas, diced red bell pepper, and pimento-stuffed olives. Cover and cook for an additional 10-15 minutes, or until the rice is tender and the chicken is cooked through.
