Ingredients
- 2 cups jasmine rice
- 1 1/2 cups coconut milk
- 1 1/2 cups water
- 1 pound shrimp, peeled and deveined
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 red chili, thinly sliced
- 2 tablespoons vegetable oil
- Salt to taste
- Chopped cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and sliced red chili. Sauté until the onion is soft and translucent.
- Add the jasmine rice to the pot and stir to coat the rice with the onion mixture.
- Pour in the coconut milk and water. Season with salt to taste. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let the rice simmer for 15-20 minutes, or until the liquid is absorbed and the rice is tender.
- While the rice is cooking, season the shrimp with salt. In a separate pan, heat a little oil over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes on each side, or until they are pink and opaque.
- Once the rice is cooked, fluff it with a fork and gently fold in the cooked shrimp.
- Transfer the Arroz de Coco com Camarao to a serving dish and garnish with chopped cilantro. Serve hot and enjoy!
