Arroz De Coco Com Camarao (coconut Rice With Shrimp)

Ingredients

  • 2 cups jasmine rice
  • 1 1/2 cups coconut milk
  • 1 1/2 cups water
  • 1 pound shrimp, peeled and deveined
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red chili, thinly sliced
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Chopped cilantro for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and sliced red chili. Sauté until the onion is soft and translucent.
  2. Add the jasmine rice to the pot and stir to coat the rice with the onion mixture.
  3. Pour in the coconut milk and water. Season with salt to taste. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let the rice simmer for 15-20 minutes, or until the liquid is absorbed and the rice is tender.
  4. While the rice is cooking, season the shrimp with salt. In a separate pan, heat a little oil over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes on each side, or until they are pink and opaque.
  5. Once the rice is cooked, fluff it with a fork and gently fold in the cooked shrimp.
