Ingredients
- 1 cup long-grain white rice
- 1 1/2 cups coconut milk
- 1 cup water
- 1 pound large prawns, peeled and deveined
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic, diced red bell pepper, paprika, and cayenne pepper. Cook for a few minutes until the peppers are tender.
- Stir in the rice and cook for 1-2 minutes to toast the grains.
- Pour in the coconut milk and water. Season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- While the rice is cooking, season the prawns with salt and pepper. In a separate pan, heat a little olive oil over medium-high heat and cook the prawns for 2-3 minutes on each side until they turn pink and opaque.
- Once the rice is done, fluff it with a fork and gently fold in the cooked prawns.
- Serve the Arroz de Coco com Gambas garnished with fresh cilantro.
