Ingredients

  • 2 cups of rice
  • 1 cup of coconut milk
  • 1/2 cup of cashew nuts
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • Salt to taste
  • Water

Instructions

  1. In a pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Stir in the rice and cook for 2 minutes, stirring constantly.
  4. Pour in the coconut milk and enough water to cover the rice by about an inch.
  5. Add salt to taste and bring to a boil.
  6. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Fluff the rice with a fork and stir in the cashew nuts.
  8. Remove from heat and let it sit for a few minutes before serving.
