Ingredients
- 2 cups of rice
- 1 cup of coconut milk
- 1/2 cup of cashew nuts
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- Salt to taste

Instructions
- In a pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Stir in the rice and cook for 2 minutes, stirring constantly.
- Pour in the coconut milk and enough water to cover the rice by about an inch.
- Add salt to taste and bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork and stir in the cashew nuts.
- Remove from heat and let it sit for a few minutes before serving.
