Arroz De Frango (portuguese Chicken Rice)

Ingredients

  • 1 whole chicken, cut into pieces
  • 2 cups of jasmine rice
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 tomatoes, chopped
  • 3 cups of chicken broth
  • 1/2 cup of white wine
  • 2 bay leaves
  • 1 teaspoon of paprika
  • 1/2 teaspoon of turmeric
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Instructions

  1. Season the chicken pieces with salt, pepper, paprika, and turmeric.
  2. In a large pot, heat the olive oil over medium heat. Add the seasoned chicken and cook until browned on all sides. Remove the chicken from the pot and set aside.
  3. In the same pot, sauté the onions and garlic until softened. Add the bell peppers and tomatoes, and cook for a few minutes.
  4. Stir in the rice, then add the white wine and cook for 2 minutes.
  5. Return the chicken pieces to the pot, add the bay leaves, and pour in the chicken broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes until the rice is cooked and the chicken is tender.
  6. Remove the bay leaves and serve the Arroz de Frango hot.
