Arroz De Frango (portuguese Chicken Rice)
Arroz de Frango is a popular Macanese dish that combines the flavors of Portuguese and Chinese cuisine. This comforting one-pot meal features tender chicken, fragrant rice, and a delicious blend of spices.
Ingredients
- 1 whole chicken, cut into pieces
- 2 cups of jasmine rice
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 tomatoes, chopped
- 3 cups of chicken broth
- 1/2 cup of white wine
- 2 bay leaves
- 1 teaspoon of paprika
- 1/2 teaspoon of turmeric
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- Season the chicken pieces with salt, pepper, paprika, and turmeric.
- In a large pot, heat the olive oil over medium heat. Add the seasoned chicken and cook until browned on all sides. Remove the chicken from the pot and set aside.
- In the same pot, sauté the onions and garlic until softened. Add the bell peppers and tomatoes, and cook for a few minutes.
- Stir in the rice, then add the white wine and cook for 2 minutes.
- Return the chicken pieces to the pot, add the bay leaves, and pour in the chicken broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes until the rice is cooked and the chicken is tender.
- Remove the bay leaves and serve the Arroz de Frango hot.
