Arroz De Pato (macanese Style Portuguese Duck Rice)

Ingredients

  • 1 whole duck, cut into pieces
  • 2 cups of rice
  • 4 cups of chicken broth
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 tablespoon of paprika
  • 1 teaspoon of turmeric
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the duck pieces over medium heat until golden and crispy. Remove the duck from the pot and set aside.
  2. In the same pot, sauté the chopped onion and minced garlic until fragrant.
  3. Add the rice, paprika, turmeric, and bay leaf to the pot, stirring to combine with the onion and garlic.
  4. Return the browned duck pieces to the pot and pour in the chicken broth. Season with salt and pepper.
  5. Cover the pot and let the Arroz de Pato simmer for about 30-40 minutes, or until the rice is cooked and the duck is tender.
  6. Once done, remove the bay leaf and garnish the Arroz de Pato with chopped cilantro before serving.
