Ingredients
- 3 cups cooked white rice

- 3 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
- Add the beaten eggs and scramble until cooked. Remove from the pan and set aside.
- Heat the remaining 2 tablespoons of vegetable oil in the same pan.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the mixed vegetables and stir-fry for 3-4 minutes until they are tender-crisp.
- Add the cooked rice to the pan and stir to combine with the vegetables.
- Pour the soy sauce over the rice and vegetables, and stir to evenly distribute.
- Add the scrambled eggs back into the pan and stir to combine.
- Season with salt and pepper to taste.
- Remove from heat and serve hot.
