Ingredients

  • 3 cups cooked white rice
  • 1 cup mixed vegetables (carrots, peas, bell peppers)

  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 eggs, beaten
  • 3 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
  2. Add the beaten eggs and scramble until cooked. Remove from the pan and set aside.
  3. Heat the remaining 2 tablespoons of vegetable oil in the same pan.
  4. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  5. Add the mixed vegetables and stir-fry for 3-4 minutes until they are tender-crisp.
  6. Add the cooked rice to the pan and stir to combine with the vegetables.
  7. Pour the soy sauce over the rice and vegetables, and stir to evenly distribute.
  8. Add the scrambled eggs back into the pan and stir to combine.
  9. Season with salt and pepper to taste.
  10. Remove from heat and serve hot.
