Ingredients

  • 2 cups of cooked white rice
  • 1 pound of shrimp, peeled and deveined
  • 1 red bell pepper, diced
  • 1 cup of frozen peas
  • 3 cloves of garlic, minced
  • 2 eggs, beaten
  • 3 tablespoons of soy sauce
  • 2 tablespoons of vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet over medium heat.
  2. Add the shrimp and cook for 2-3 minutes until pink. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add the remaining 1 tablespoon of vegetable oil.
  4. Add the diced red bell pepper and frozen peas, and cook for 3-4 minutes until the vegetables are tender.
  5. Push the vegetables to one side of the skillet and pour the beaten eggs into the empty space.
  6. Scramble the eggs until cooked, then mix them with the vegetables in the skillet.
  7. Add the minced garlic to the skillet and cook for 1 minute.
  8. Add the cooked rice and soy sauce to the skillet, and stir to combine with the vegetables and eggs.
  9. Finally, add the cooked shrimp to the skillet and stir to heat through.
  10. Season with salt and pepper to taste.
  11. Remove from heat and serve hot.
