Ingredients

  • 3 cups cooked white rice
  • 2 tablespoons vegetable oil
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 tablespoon Szechuan peppercorns
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1/2 cup frozen peas
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the diced bell peppers, onion, garlic, and Szechuan peppercorns to the skillet. Stir-fry for 2-3 minutes until the vegetables are slightly tender.
  3. Push the vegetables to one side of the skillet and add the cooked rice to the empty side. Stir-fry the rice for 2-3 minutes to heat it through.
  4. Drizzle the soy sauce and sesame oil over the rice. Add the frozen peas and continue stir-frying for another 2-3 minutes.
  5. Season the fried rice with salt and pepper to taste. Remove from heat and serve hot.
