Ingredients
- 2 cups long-grain white rice
- 1 can (15 oz) black beans, drained and rinsed
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 2 cups vegetable broth
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and bell pepper. Cook until the vegetables are soft, about 5 minutes.
- Stir in the rice, cumin, and oregano. Cook for 2 minutes, stirring frequently.
- Add the black beans and vegetable broth. Season with salt and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.
