Arsa Kheer (Jaggery-Coated Rice Flour Pudding)
Jaggery-Coated Rice Flour Pudding, also known as Arsa Kheer, is a traditional sweet dish from Jharkhandi Cuisine. This delectable dessert is made with rice flour, jaggery, and ghee, and is often prepared during festivals and special occasions.
Ingredients
- 2 cups rice flour
- 1 cup jaggery, grated
- 4 cups water
- 1/4 cup ghee
- 1/4 tsp cardamom powder
- 2 tbsp chopped nuts (almonds, cashews, pistachios)
Instructions
- In a heavy-bottomed pan, heat ghee over medium heat.
- Add the rice flour and roast it in ghee until it turns golden brown and aromatic.
- In a separate pan, heat water and jaggery together to make a syrup.
- Add the jaggery syrup to the roasted rice flour and mix well to avoid lumps.
- Cook the mixture on low heat, stirring continuously, until it thickens and leaves the sides of the pan.
- Add cardamom powder and chopped nuts, and mix well.
- Remove from heat and let it cool for a few minutes before serving.
