Jaggery-Coated Rice Flour Pudding, also known as Arsa Kheer, is a traditional sweet dish from Jharkhandi Cuisine. This delectable dessert is made with rice flour, jaggery, and ghee, and is often prepared during festivals and special occasions.

Ingredients

  • 2 cups rice flour
  • 1 cup jaggery, grated
  • 4 cups water
  • 1/4 cup ghee
  • 1/4 tsp cardamom powder
  • 2 tbsp chopped nuts (almonds, cashews, pistachios)

Instructions

  1. In a heavy-bottomed pan, heat ghee over medium heat.
  2. Add the rice flour and roast it in ghee until it turns golden brown and aromatic.
  3. In a separate pan, heat water and jaggery together to make a syrup.
  4. Add the jaggery syrup to the roasted rice flour and mix well to avoid lumps.
  5. Cook the mixture on low heat, stirring continuously, until it thickens and leaves the sides of the pan.
  6. Add cardamom powder and chopped nuts, and mix well.
  7. Remove from heat and let it cool for a few minutes before serving.
